It should have occurred to them that feeding a thestral poisoned meat would poison the thestral. Why couldn't they just transfigure the evidence into a bone? It worked for Barty Jr.

The progression of alternate events is pretty cool though...

I guess since Tonks is already semi insane the prophecy's anti theft insanity curse didn't affect her .
