I am a part of many fandoms and have written, personally, for many as well. Any of the stories that I publish will be completed prior to posting to avoid leaving a story unfinished or with copious amounts of time in between updates. That being said, I also don't post works unless I like them enough to have them published for others to read, so I definitely will not be one of those people who have hundreds of works for hundreds of fandoms. I'm simply too picky for it to be possible.
