They never appreciated her. The sweaters that she knitted all by herself weren't appreciated. All thirty five sweaters that she spent all her money on to buy the wool for were ignored, insulted even by people like Pacifica Northwest. She spent all her free time either working on her sweaters or going on insane, dangerous monster hunts with her twin brother, almost being killed in the process.
Dipper never appreciated her sweaters, barely acknowledging them in his countless pursuits of the paranormal.
The least he, no, THEY, could do is appreciate her! Her work! Her art! Her help!
Instead, they chose to bring her anger down on them.
Mabel Pines ripped the knife out from Dipper's head, gripped his unmoving body, and dragged it down the empty hallway towards the attic.
If they didn't appreciate her sweaters, then she'll make THEM into sweaters. All of them.
