Well i don't really want to be mean but...at this point her animagus form ( a nundus) is not suppose to be let's say...discret. I mean the description of a nundus is HILL or GIANTIC size so on a battlefield even if they aren't looking at her she stand out quite a bit. Of course we are talking adult size but she's 17 at this point soooo she's kinda more hill size than kitten size :/. Maybe i misunderstand at wich point i would like an explenation. I'm not against huge animagus form, but make sure they look like they are suppose to.

I think you just made her immortal, or at least even longer lived than normal people. So I'm not sure who'd work for her in this world at all.

(and I'm a little surprised that Sabo didn't make the list, he'd have been a good fit too, especially personality/character-wise for what she needs/deserves, in that way he ranks close to Shanks at the top - but long-life aside too *sigh* lol)

The long-life thing makes me not in favour of Mihawk or Shanks (he has two-arms in your story right? Not a requirement to him being a romantic lead, just something I wasn't sure about in your story),
but I really want to be in favour of Shanks (I'm actually worried the series author is gearing up to kill him off) - maybe he can become a devil fruit user to extend his life?
(an answer that may make any of your characters but Ace [as he already has one and more doesn't always work] fit Hyacinthe better, though I doubt Zolo or Mihawk would let that happen to themselves before Zolo surpasses Mihawk lol -fair-fight- lol).

Mihawk doesn't seem to have a ton going for him, beyond his fighting ability, some of his personality, and his weird vampire/Spanish-cavalier type vibe. And he's definitely the oldest potential. But I can't eliminate him as an interesting partner for Hyacinthe, I just don't favour him over the others.

Ace is scheduled to die in the canon future of your time-line, but will he in yours? Otherwise I don't think they have enough time for romance (and the long-life part). Attractive pairing though, and in your list a fav of mine.

Zoro, I like this idea best if the lifespans are as unmatched as I think you're suggesting they are. She'd have a longer while with someone about her age (maybe finding love again in the distant future after he's gone, maybe he'd eat a devil fruit gaining a similar lifespan), and they'd have fun training together, and he has a good personality for her. Though I ship him with Nami lol, but he'd make your Hyacinthe a good partner.

So life-spans unfixed (and young enough for more chance of more time with her) I find a confused tie with Zolo in the lead - maybe; and Ace if he doesn't die so soon.
(Or Sabo lol)
If life-spans are magically fixed, or Hyacinthe is not long-lived (but this is not my preference, I'd rather he have a long time with her), I actually think my favourite for Hyacinthe is
Shanks!
His character/personality is more what she needs (even if he did see her as a little kid once lol), making this a great pairing.

But it is your story, and you know your mind best for where you want this to go. Pair her with whoever makes your muse flow.

You make me wish for recognition, but not reconciliation, of Hermione's current feelings and regrets by Hyacinthe - just so that Hyacinthe could have a little ray of light to look back on, but without ever needing to forget, and probably never to forgive either.

These first two chapters I could see easily leading in to a Hellsing crossover too lol. Though that would be tough since Alucard is over-powered in his own story without others lol.

I love the story so far also I think hyacinth should be with shanks I feel an old soul like her would go alond better with him also I never see stories with shanks as a option they are always beaten by ace.
