So the show is over and it seems they never mentioned her last name? What the heck? Also I love this story so far! Very easy to imagine the characters interacting in this way. :)

Very interesting. I find Penny being fired because of the interactions with an ornery Sheldon totally plausible. And the show idea is an interesting one. I'd love to see more about what happens with that.
