If you start doing kitbashes for them later you could take insopiration from the pegasus gundam sinanju unicorn kit bash since it would be cool to see the unicorn gain a somwhat more knightly look to it. I could see ruby adding parts from the crossbones since it has some pretty intresting ruby feeling parts. I could see yang having parts of the Gundam maxter I could see Blake having the beam ribbon and parts from the Shia quanta added to it.

Since Jaune is based on the Unicorn..
Pyrrha should get the RG Tallgeese and custom it with the ground gundam (thunderbolt) spear and add omph to the shield and with her choice color
Nora probably will get the Vual and get a customized grenade launvher and add more armor and make it thicker and pinker.
Ren should get the Strike Noir with bladed pistols and make it transformable perhaps? his color motiff..

think this has started awesome am currently building my own sd Mach Gundam based on the rider can't wait to see how this series plays out

not what I would have thought would be jaune’s gunpla ..., I mean the unicorn kinda makes me think more of Wiess but the story seems good so far. The sinanju stine the barbatos or the zata gundam even the nu or grandaddy gundam ., but I can kinda see the unicorn fitting thematically. I’m kinda wondering how did things from gundam pop up in the ruby verse. Hope you continue this story it seems fun.

My Ideas for RWBY gunplas (Since this is 1/144 battle):
Ruby should got: HGFA Deathscythe hell custom EW with HG Dynames kitbashed together since she likes snipers. Her color motiff too
Yang should got: Shinning Gundam since shes a brawler.. same with The burning gundam melee type but mixed with the Schuzurm Gallus weapons and accesories. Her color motiff there.
Weiss: Should have the Gyan kitbashed with Quebley a funnel controlling Gyan. Her colors of course.
Blake: Should have the Blitz Gundam with cat ears and custom weapons. Also she likes black
