You have to many projects to focus on, my advice is that you focus in one of them until completion, then focus in the next, having many stories to write at the same time is a receipt to never end your story, ever.

Focus in one story, take your time, then go to the next one, you are only human and even if you are a prolific writer sooner or later you always get to your breaking point, you want to take a break or worse, you get writer block, and let me tell you, that isn't nice.

Also focus your attention in something else, another hobby other than writing, expand your knowledge, that can be useful for future stories, read, watching anime, watching TV Show, etc.

Unless you create a really weak thread to hold that thought (and it will be weak), the pairing would just feel too odd in this setting.
Jon/Val would have not been out of the picture if this was Jon Snow from canon, not Jon Stark.
