Is it still considered lazy if I'm rewriting all 40 episodes of Gravity Falls to where I'm in it knowing what will happen and the finished story taking almost a year-and-a-half to complete and having over 150,000 words?

Bob Ross is the best. Came home one night worked up after a long day and just watched his show. Took minutes for it to take effect. So a long wait for binging Bob Ross is completely understandable. As for the chapter, I saw no happy accidents so I think you're good.

I really like this fic. I appreciate that you didn't take the easy way out and make it an AU where Star is non-magical, a lot of fanfiction authors wouldn't take that chance. As far as OCs go, Wallace is pretty great so far, in that he's an actual character and not a blatant self-insert or ship fodder. And "The Road" is an unusually inspired choice of basis for the plot. My only complaint is that your writing style, while mostly solid, feels a little utilitarian at times- some more descriptive detail would really take it to the next level, especially since there's so many interesting things to describe in this fic. 8.5/10- keep on writing and I'll keep on reading! :)
