After so much of your story is canon, I'd vote for: Make the child canon! ;-) But that's still your decision. Who said they didn't have a daughter, too? Or twins?

By the way, you asked about the baby of Faramir and Eowyn. If you want to do it canon, then it will have to be a boy. Tolkien did define the three names for the firstborn sons of the three important couples. Aragorn and Arwen had Eldarion, Eomer and Lothiriel had Elfwine, and Faramir and Eowyn had Elboron.
But maybe you want to do it otherwise. It's your story! :-)
